Gavi DOCG

Winemaker’s notes: Intense bouquet, fresh fruity palate, with a complex finish, reminiscent of almonds

  • Vinification process

    The grapes are de-stemmed and immediately soft pressed in pneumatic presses and separated from the skins. Selected yeasts are added to start fermentation quickly. Fermentation is temperature controlled at 17-18C for 15 days. Once the fermentation is complete, the wine is racked, then kept on its fine lees until the end of January. Malolactic is not carried out in order to retain optimum acidity and freshness. The wine is constantly kept at a maximum of 15°C in order to retain freshness

  • Vine

    100% Cortese - Selected vineyards in the quality Gavi producing area of Monferrato, Piemonte. Yield is restricted to no more than 65 hl/ha – Cortese does not naturally produce a lot of sugar/alcohol, therefore keeping production low gives a wine with a higher alcohol level and better balance

  • Harvest

    The grapes are carefully harvested by hand in mid-September
